Miso, Yuzu & Ginger Tofu Marinade

This simple miso, yuzu and ginger marinade is an easy way to add bold flavour to tofu without needing lots of ingredients. One batch is enough to marinate 300 g of tofu while leaving plenty to use as a finishing sauce for stir-fries, noodle dishes or grain bowls.

Perfect for meal prep or weeknight cooking, this versatile marinade combines savoury miso, bright yuzu and fresh ginger to create a balanced flavour that works with a wide variety of vegetables and noodles.



Makes enough to:

  • Marinate 300 g firm tofu

  • Finish a stir-fry with noodles


Ingredients

  • 2 tbsp white miso paste

  • 2 tbsp yuzu juice

  • 2 tbsp light soy sauce

  • 2 tbsp freshly grated ginger

  • 4 cloves garlic, finely chopped

  • 2 tsp toasted sesame seeds

  • 4 tbsp water


Method

  1. Add all of the ingredients to a bowl and whisk until smooth.

  2. Pour half of the mixture over 300 g of pressed tofu and leave to marinate for at least 20 minutes, or overnight for maximum flavour.

  3. Cook the tofu until golden and lightly caramelised.

  4. Set the remaining half aside to use as a finishing sauce once your vegetables and noodles are cooked.

  5. Once your vegetables and noodles are cooked, pour the remaining sauce into the pan and toss everything together for 1–2 minutes until hot and evenly coated.

  6. Serve immediately.

Making one larger batch means you only prepare the sauce once. Half infuses the tofu with flavour while the remaining half creates a fresh finishing sauce, giving your dish extra depth without any additional effort.
