Looking for a hearty, nutrient-dense breakfast that requires zero cooking and keeps you fueled for hours? This no-cook spelt bowl is the perfect alternative to traditional porridge. By swapping oats for hearty spelt flakes, you get a robust, nutty texture that pairs beautifully with creamy plant milk, rich nut butters, and a burst of sweet berries.

Just mix, let it sit for a few minutes (or prep it the night before), and dive in!

Ingredients

  • 1 cup Spelt flakes (Rude Health works brilliantly here)

  • 1/8 tsp Fine sea salt (approx. 8 turns of a standard salt mill)

  • 2 Brazil nuts

  • 4 Walnuts, roughly chopped

  • 1 tbsp Creamy peanut butter

  • 1 tbsp Pure maple syrup

  • 1/2 cup Frozen blueberries (or a mixed berry blend)

  • 1 cup Oat milk (Soy milk or any favorite plant-based alternative works perfectly)


Method

1. Combine the Base

In your favorite breakfast bowl, add the spelt flakes, brazil nuts, and walnuts. Toss in the salt and stir briefly to distribute.

2. Add the Sweet & Creamy Layers

Dollop the peanut butter and drizzle the maple syrup directly over the dry ingredients. Top it all off with your frozen berries.

3. Pour and Mix

Pour the oat milk over the top. Give everything a thorough stir to ensure the peanut butter mixes in and the spelt flakes are completely submerged.

4. Set and Serve

Let the bowl sit for 2 to 3 minutes to allow the spelt flakes to soften slightly and the frozen berries to begin releasing their sweet juices. Dig in and enjoy!

Chef’s Tip: If you prefer a softer texture or a grab-and-go breakfast for busy mornings, mix everything in a jar the night before and leave it in the fridge overnight.
